Do you enjoy tasting brand new cuisines
from other countries? Have you ever tried any dishes that are from Chaozhou (潮州)? Actually,
it is originated from the Chaoshan (潮汕) region
in the east of Guangdong province,
which includes the cities of Chaozhou(潮州), Shantou(汕頭)and Jieyang(桂楊).
Actually, the most
distinctive feature of Chaozhou cuisine is well known for its seafood and vegetarian dishes and is commonly regarded
as being healthy. As a delicate
cuisine, oil is not often used in large quantities and there is a relatively
heavy emphasis on poaching(用沸水煮), steaming(蒸) and braising(供燉), as well as the common Chinese method of stir-frying(爆炒).
I bet there must be a culture
emerged from each cuisine. For the Chaozhou cuisine, it is also known
for a late night meal known as meh siao (Chinese: 夜宵; pinyin: yèxiāo) or da lang (Chinese: 打冷; pinyin: dǎléng) among the
Cantonese. People in Chaozhou enjoy eating out close to midnight in restaurants
or at roadside food stalls. Some dai
pai dong-like restaurants(大排楅)even stay open till dawn. So you can say Chaozhou cuisine is
actually pulling people close together. Quite powerful right?:P
